l had hung a deer to age but the weather didnt cooperate and the carcass froze.l thawed and butchered the meat and re froze it.Now when l thaw the steaks again to eat, can l let them sit in the fridge for a week to age or will this spoil the meat?

l do not think l would risk it under those conditions. The exposed surfaces of the meat has changed & exposure to bacteria has been greatly increased. Once the meat thaws, bacteria that was made dormant because of the freezing process kicks into high reproductive gear & the spoiling process takes off where it left off. Freezing does not kill the bacteria, but only slows down the process, putting the bacteria into a form of hibernation. Once the freezing stops & thawing begins, the bacteria take up where they left off. For that same reason, u see the WARNING labels on meat, fish & poultry telling us when a product has been previously frozen & thawed. In order, fish, poultry, & beef/pork/venison begin to spoil when thawed out, with fish spoiling fastest & so forth. l would just eat the venison as it is & not take chances with otherwise healthy eating. If needed, consider using a good meat tenderizer in place of aging, & use a teaspoon or two of instant coffee in the recipe to hide the wild taste. (It works!) And next time... Well, u know. Right? The meat is going to last about 5 days in the fridge before needing to be cooked. l would not consider this adequate time to have much aging effect, so you're likely just as well off eating it as soon as it is thawed, especially if you intend to cook any of it fairly rare.

l do not think that will work. Try tenderizing the steaks and think about another deer next year.

l have found that freezing meat tends to soften it a tad. Water in the cells expands thereby weakening the muscle cell wall. But trying to age it now will only bring you grief.
l would bet if you cut up some of that meat now it would taste pretty good as long as it was kept clean and was field dressed fast.

l have aged meat for only 2 days in a pinch and it tasted fine to me. But then l am an animal lol.

shave the outside let it black skin then age it very little bacteria on game animals unless you popped gut or peebag
